David and Lauren (aka LP), our two brewers, have been working on their kombucha project “Fractal Fermentations”. We feel that given our sour program, it’s a natural progression for us to collaborate with them and introduce our first alcoholic kombucha. We are very excited to delve into this ancient fermentation and express it with limited runs and local ingredients. “Hi appeel” will be released on Valentines Day. It’s a green tea based kombucha that was aged on hibiscus petals and then drenched with the juice of 35 local oranges. So come on by this Thursday to show them some support because this first small batch booch won’t last long!
